My brisket is ready when I am, but had a change in plan.

These boys showed up with 80 lbs of 12-16 count shrimp right off da boat! I bought all 80 after they headed and bagged them at $3.95 per lb.

These were very fresh, had no smell, were the perfect color for fresh and 2/3rds bigger than the shrimps at WD for $3.99 per lb.

So I'm guessin there will be shrimp in the near future.

The method isn't for bark, but sure didn't hurt the flavor and texture.:cheers:
 
You bought Eighty Pounds of shrimp? That price is awesome. Name a few ways you are going to cook them. The brisket looks like it would melt in yer mouth... Now I want brisket today... Keep up the good cookin RB!!!!! ;)
 
That wasn't a good deal on the shrimp...it was a steal. :LOL:
The brisket is sliced thick, which means to me it's tender. Looks like a lot of flavor in there. I would rather go for flavor than bark bark, which I think is over rated.
