no way could leave a chicken direct like that for 20
minutes. looks like he may have removed some burnt
skin before the final pic.

Cool back bone removal though.

It was 20 minutes and nothing was removed or hidden. The temp was 350 at the grate and a closed kettle produces no flare up at all. The reason behind the bricks is to make the skin nice and crispy, and it was.
