Beef ribs again

This past Saturday I cooked 4 racks of beefy ribs. Two with WR and two with Santa Maria Style seasoning.

I really like the SMS ones the day of the cook. Yes, I admit, a bit biased. Then next day for dinner I had the WR ribs and liked them a lot more.

I would.......... I normally do a pretty heavy coat while preparing my meat, and then an addtional dusting once I put it on the grill. The sugar will melt and caramelize and give you a good concentrated spicy/sweet bark.

About 4 hours on the WSM, W-S rib rack, no basting, and I am not picky about keeping temps. I think I cooked them at a higher temp, somewhere between 230-250. Spares take me 5-6 hours and I cook at a wee bit lower temp.
