We had a birthday party for my wife and me this weekend, so I fired up the UDS on a 7 pound butt. It cooked for 7 hours and I pulled it off at 195º, it pulled ok but still needed to be chopped. There weren't any complainers as there was just enough left overs for one sandwich the next day. The cook went great otherwise, it's only my third cook on it and I'm starting to get to know her, but there's still a lot of her personality left to explore. She stayed right around 250º most of the day and never went below 225º or over 250º, also only used like 5 pounds of charcoal.

Good bbq sammie with some slaw is hard to beat. Congrats on a great cook.
 
Yes..dittos to whut Lew said. Be careful not to covet your neighbors butt or you neighbors wifes butt etc.
