Sous Chef
I had an engagement free weekend, so I thought it'd be fun to fire up the smoker and play around a bit. The one thing I was most excited about was trying out some chicken lollipops! They were labor intensive, but worth it. All the neighbor kids LOVED them. They were asking about them the next day!!! I'll be doing them again.
Here's a pictorial of the event.
Pork butts rubbed with Head Country
Wrapped at 160*
St. Louis cut Spare Ribs rubbed with Suckle Busters Hog Waller (thanks secret santa!)
Lunch!
Chicken Lollipops!
Also had some pork chops and country style pork ribs for one of the neighbors on the smoker.
All was very good. Vac sealed what wasn't eaten and gave to neighbors and friends. I was definetely tired when it was all over. I had prepped/smoked (and drank!) from 8PM on Friday night until 5PM on Saturday night. And drank some more after that. Waited to vac seal everything until Sunday afternoon. Not to mention we had some outdoor projects to do both days as well. Great weekend! I think I could do this everyweekend!
