Chicken seasoned with some Chef Meritos Chicken seasoning, green onions, Mexican onions and jalapenoes on the Santa Maria Grill. This pic was taken about half way through the cook.

Plated. Chicken was shredded then put on a corn tortilla fajita style with some chipolte sour cream added,refried beans and the rest of the things from the grill. Everything was great except the jalapenos were insanely hot!!!

Hope V. got all the thorns out of the Prickly Pears. Person get a load of them in the mouth parts can make them walk around with the lips peeled back..or as my dear old daddy sometime say about them with new ultra big false teeth...Like a jackass eating cactus.
 
Oh Mylanta! That looks good. Mesquite? Doesn't the SM cook chicken absolutly perfect?


I used red oak. If I have the time I prefer chicken on the SM grill. Do you know how they prepare the chicken in The Santa Maria area by chance, I have looked for a marinade but haven't found one yet

It aint too popular up there. It's all top block, Sirloin and most of all Tri Tip. I did see this dude doen it. The whole vid use to be on YouTube but they took it down. I got it on NetFlix. Cool vid to relax on a Sunday. When I cook anything Mex I always use mesquite lump even on the SM. Just goes good. Everything I use a mix of Red, White and Live Oak. Just picked up a bunch of almond too.

That's some nice looking yardbird... and them other vittles look good too!!
