10 lbs ground pork....
5 Tbs. Canning Salt
3 Eggs
1 Pint cold Milk
1 Tbs. Pepper
1 Tbs. Mace
1 tsp Ginger
1 Tbs. Nutmeg

This will taste exactly like Johnsonville Brats.Since Johnsonvilles aren't smoked.....don't add a cure.But with milk and eggs in them,they should be frozen if kept longer than 3-4 days in the fridge.<

Len Poli also shows a Johnsonville clone recipe on his webiste but the file seems to be missing.

Len do say they are "Wisconsin style" brats and are meant to be sweet tasting (glad I aint losing my mind cuz they always taste sweet to me:) Now how sweet the above recipe will come out I aint sure since it dont seem to have any sugar in it. All may rest assured I aint made it personally.

Your mighty more than welcome sir. I would also check out Len's website and see if you can pull up his recipe. He put's all his stuff in pdf files and I had trouble pulling another pdf file just a while ago. Since he is the undisputed guru of internet sausage making might tend to trust his recipe a bit more than the one which got posted. Kindly keeps us posted on how things turn out.

You betcha. I keep my eyes peeled for any more which claim to duplicate Johnsonvilles. Know there is bound to be a few more floating around out there in cyberspace.
