Was in the mood today ..................

................. to make some sausage. I made some of Bigwheels "Lonesome Yankee Bratwurst (2003) " http://www.bbq-4-u.com/forum/viewtopic.php?f=45&t=12316 Some of my Italian sausage http://www.bbq-4-u.com/forum/viewtopic.php?f=45&t=13165 and some Sante Fe sausage that I have a mix for. I ground 15 pounds of pork yesterday, mixed and stuffed 5 lbs of each today.
All Ground Up

First load in the stuffer

Big Wheels Lonesome Yankee Brats

Sante Fe

Italian

A little sampler

Sante Fe Up Close and Personal


I wrapped most and I'm gonna shrink wrap as soon as it freezes. I left out about 1 1/4 lbs of the Lonesome brats for sausage and pepper for dinner tomorrow.
Bigwheel, that is a real tasty recipe! I did add some garlic to it, it just seemed to fit!

They all look alike on the outside. Not that it would matter to me, but did you mark them somehow to tell the difference? I would just grab one and hammer it! Nice job!

They are all in shrink wrap bags, each rope seperate with the type it is. They are packed in 1 1/4 pound packages which is a good size serving at my house. If I need more, I open 2 packages.

When I vacuum packed what I made last weekend, I printed a copy of the recipe and put it into each bag with the sausages. That way I'll know what variety, and also the recipe if it's good enough to want to make more of the same.

Looks great Nick. Glad you saw fit to do some tweaking. That Brat recipe is intentionally underspiced to appeal to the Southern Illinois type pallette. I think they was all raised on Johnsonvilles.
