1 its a preferance thing...sometimes I like it coarse..other times finer
2 I don't know...the soy just acts as a binder
3 size depends on what you can fit in the smokehouse
 
Grind to your preference and them mix in some trimmed meat cubes (3/8") for kielbasa. Comes out kind of cool.
