Ok Mikey and me mixed up our Bacon injection….we are curing it with a Maple and Brown Sugar mix….I went back to the store today hoping to find some more pork bellies but they were all out…so I’m only making 10lbs of bacon..Oh well I’ll have to keep my eyes open for more…I also picked up some hamhocks to cure and smoke…

I’ll probably smoke it Sunday or on Memorial Day
 
I’ve got the smokehouse heating up…..and the bacon and hocks are on a tray in front of a fan to help the drying out processes and the formation of the petticle(SP)….
 
Bacon and hocks are in the smokehouse…I’ll check them in about an hour to see how dry they are then hit em with some Hickory smoke….

 
Just checked on the bacon and hocks…they are starting to take on some nice color….
