Hey Witt, I was doing some research for making an enviromentally controlled meat curing box, when I ran across who else "you" in a sausage forum.
The discussion was about this box and you recommended this freezer control and humidity controller.

My question is, did you build this thing or were you just recommending parts?

Because if you built it, was wondering how it's working?
 
Didn't build it yet...its still in the planning phase...I've gone as far as getting the freezer control...
 
If this response could be translated into Texican it would read something like unto this: I am fixing to make one of them thangs one of these days. Which means it aint real high on the agenda :shock:
For a dry cure just hang it up in your attic. That should work. Old coot down here splained it to me how he had been doing it like that for 40 years. I axed him...Whut kinda cure do you use? He say.. whut is cure? Meaning after intense further investigation he really did not use any cure in his air dried sausage. Now is that strange or whut?
