We made some home made Kielbasa for the grilling contest portion of the KCBS contest at New Paltz (Hudson Valley Ribfest). We used our Kitchen Aide with the grinder and sausage attachments. Our recipe was very simple. It was pork with salt, pepper and lots of garlic. We made our own because the Grilling Contest was sanctioned by NEBS and they adhere to KCBS rules that say the meat can not be precooked. There were a couple DQ's that day for teams who brought store bought sausages that were precooked. Anyway the Kiebasa was delicious. We didn't score well but it didn't bother us when we ate the Kielbasa sammies friday night. Good eats!

Looks great Guy. We considered kielbasa too, but went Italian. But we tanked too.
 
Not sure. The presentation sucked, but it was very very good.

It was homemade by one of the team's girlfriend's ex husband. Maybe he slipped something in there. :shock:
 
Yes in deed, those shanks look good.
As for sausage making Bill, ya got to do it, nothing like creating your own sausage and controlling the fat content, and for me the more fat the better.
