Welcome to the forum…..Yes you can use your manual stuffer to process 20lbs of meat it will take a bit longer than an electric grinder…just keep the meat cold and work in small batches at a time….I like to mix my own spice blends…I refuse to pay for the premixed stuff…..but that’s just me…I would add fat to the wild game…most typical sausage are 80-20% meat to fat….if you don’t add fat or a fat replacer for wild game I would think that your sausages run the risk of being dry….I like natural casings IMHO they are easier to deal with…but you can use collegen casings if you want or think they will be easier to work with…Manual stuffers do a fine job it just takes longer ….make sure you line up an extra set of hands when you stuff..you will need to feed the hopper and crank while someone guides the casings…Good luck and take plenty of pics…..Hope this helps
