I used a binder once on some sausage I wasn't going to smoke just grill and I didn't care for the finsished texture...JM .02

I use a binder in virtually all my sausage (soy protein meal) and really don't notice any difference in the finished texture - smoked or grilled. It does keep the sausage more moist, I find, and reduces shrinkage.
Doesnt' the binder make for a firmer sausage...

I guess it does and, you know .... as I am reading this thread and thinking about how I use binder .... I just can't recall how I came to use binder in fresh sausage :shock:

I would say that calls for another day of sausage making just to relearn the process :LOL: :LOL: . Thanks for the opportunity to have another look at what I am doing and why.
Peter I am not criticizing your use of binder in fresh sausage, I I swear by it when smoking sausage...I just prefer a loser sausage when I am grilling the fresh stuff...
