I got some briskets on sale for .97 cents a LB,so I made a big batch of jerky to give out as gifts.I used backwoods hot jerky seasoning and added a little habanero pepper sauce(SuckleBusters)to give it a little more kick.It turned out real good,I gave out about 5lbs or so to family and friends.I ground half of it and cut half into steak form,I take my hat off to the butchers.

Some people like to use a dehydrator others use a smoker it’s a matter of preference. The dehydrator takes a long time probably close to 24hrs (at least it did when I used one). In a smoker my preferred way is to keep the temp around 145* no higher than 165* any higher of a temp and you are cooking the meat. Between 145* and 165* it takes between 6-8 hr depending on the thickness of the meat.

Hope this helps...there are a couple of threads on making jerky here and the different process used take a look around
