New to "low and Slow" old hand at INFRARED cooking

Hi all, name is TMB (Tommy) been cooking many years with CharBroils Big Easy line of cookers. Heck own 5 of them now.

I have competed with them in backyard comps but now I want to step up my game. I built a char coal Big Easy and a pellet Big Easy and they work great. But now I want to really cook low and slow so bought a Rec-Tec pellet grill and love it . Always looking for advice and if there is need for help with Big Easy users I can do that

Welcome aboard. I'm new here too. Glad to see ya cooking low and slow. I used to be able to fill up my TMLE and cook for hours, but lately prices have been kinda high, so I mostly grill. Hoping to do some slabs of ribs this Memorial day.
