Hey,

My name is Nick and I am right here in Mississippi. I grew up eating everything smoked year round at my folk's house. I am 24 and have just become completely engrossed in figuring out how to barbeque and to do it better. We smoked about 20 pounds of meat last weekend and I now have the urge to get better (not that it was that bad).

I have been listening to BBQ central for a few months now just on the website...I just discovered the podcasts are downloadable on my phone...so now it is all I listen to.

me not knowing about this site and the downloads earlier.

I am currently in a constant state of BBQ withdrawal because of the following BS- You can have a wood fireplace in your apartment or a gas grill outside the apartment...but charcoal/woodburning outdoor grills are a fire hazard...RETARDED I did see that some people are taking an iron skillet with a lid and drilling some holes to make a smoke pot for your gas grill...but after having anything resembling real smoke I can't imagine this working. I would rather grill on the grill and smoke on the smoker than halfass either one.

Luckily, I can go over to Dad's and get a little craving resolved by cooking on his verticle smoker.

I am very interested in becoming a more active barbequer and have cooked in a few restaurants (but mainly skillet top and grill). I am halfass looking for a mobile smoker like a Klose or Gatorpit (about 1/3 of the way there on the funding for the basic models...just really a drum with offset). I currently own a brinkman bullet smoker and a brinkman gas grill (the bullet is a little jank, but the gas is fulfilling its intended purpose). My longterm plan is to build a very large full brick verticle offset smoker in my back yard(when I get one).

Hey Nick, welcome on board. It's hard to believe that Mississippi has such a law about outdoor grilling. Is that just in your apartment cc&rs, or all over? Anyway, you've found the right place and there's a lot of good information to be found here.

The last few apartments have been equally naziesque, but I don't know of any actual laws. Supposedly I can be fined for keeping the smoker on the premesis even if unused(I am ignoring this and keeping it in storage).
