Homemade smoker

Hi
I'm from central Louiaiana. Just joined today.I'm retired and have plenty of time time to que.I have a homemade barrel smoker and a masterbuilt electric smoker, but my favorite is a smoker I made out of wood mounted on an old gas grill frame.If anybody would like to see it go to youtube and search my kajun smoker.

So, very cool looking unit, Pondman! A few questions...

- is the water pan sitting directly on the coals?
- How long does the cooker maintain the temperature before you have to make adjustments or add fuel?
- Do you use the vents on the top and bottom to regulate temperature at all or just as a heat release as you mentioned in the video!

BTW, great use of an old grill...looks like the cooker fit right in to the space! Great job!
