Hey now from northern MA

Been here a while already, everyone has been wicked cool. Have a coupla years on my WSM and am hoping to start getting my butt handed to me in some local comps this year. Time to take my beatings!

As far as the comp. Do 2 practice comps in your back yard, back timing your meats.
Timing is most important. With the exception of chicken, your meat can be pulled off way early doubled foiled wrapped in a towel and put in a dry cooler. We have pulled briskets 2 to three hours prior to turn ins same with shoulder. I don’t like to let ribs rest longer than a half hour, hour at most. If you don’t catch a call make sure you catch a buzz. Most of all HAVE FUN. Don’t get too wrapped up in Win Win Win attitude. Just do your best. It’s fun to me just to see how you do. Folks will come to your cite and offer advice. Everyone is friendly and there to have fun. Good luck keep us posted.
P.S. Study your sanctioning body. Study and google everything you can. Our first comp we were running out to get spares, we showed up with baby backs. Had to run out to pick up a fire extinguisher too. You can avoid a lot of headachs your first time with proper research.
