Welcome to the forum.

I'm going to try and pick your brains a little here...Was born and raised 'til about 5 in Salisbury, but we (the family) always liked an EASTERN NC vinegar/pepper sauce. No, not that other stuff where they take good sauce and add ketchup/catsup to it, the real deal. What's your opinion of a really good Eastern NC sauce? Brand or recipe. I finally found some that's bottled in Florida that comes pretty close to what I'm remembering (we'd go back once a year 'til I was about 15 or so, not trying to remember back to 4 LOL )

Hey Bob, thanks for the "welcome"!
As far as a good Eastern NC sauce, I don't think you can beat "Smithfields Chicken & Barbecue" sauce. Smithfields is a big chain of BBQ restaurants throughout the eastern part of NC. They probably now have over 30 locations. They DON'T cook over wood or charcoal, so their chopped pork has NO smoke flavor at all, but they sauce their pork with a true eastern sauce and it tastes wonderful! They sell the sauce at the counter, but I'm pretty sure it would be for sale on their website too.
Try it, I bet you'll like it!

Hell the reason for long smokes is to infuse smoke into your food. Just think how good this food would taste with smoke added to it.
