Hello from Indiana!

Hello everyone

I am a chef from the Indianapolis area and I love smoked food. I have been smoking for about 5 years now and hope to do some competitions in the future. I look forward to sharing and learning with you all.

This is VERY true. Shoot, we even have a very LARGE thread on this forum dedicated to those UGLY Drums.
BBQ Central "Official" UDS Thread

I just got a BRAND NEW BEAUTIFUL pit this past Wednesday, and so far, all i've cooked on it is a couple of turkey wings and 64 bacon wrapped Sweet Tator Tots and nothing was actually picture worthy.

'Round here, some of the guys have a saying...No Pictures, It DIDN'T Happen so I guess I didn't cook anything yet.

Besides, every time I see pictures of those Ugly Drums, I get a little closer to rounding up everything I need to build one. You just might push me over the edge.

You just might get your chance...They were great, just not picture worthy. I was concentrating on learning the new pit, and didn't put them on the grate correctly and the bacon un-wrapped on most of them.

I went to the store last night and bought another bag, and I plan on cooking again today (just pork butts) so I just might get another batch of the Sweet Tator Tots in there, too. Disclaimer...They're Publix brand, not Ore-Ida, so they're not officially sweet Tator Tots.

Going out to light the fire now. How long will it take to warm up 125 pounds of tuning plates???
