Checking in from SC

Just ran across this forum and decided to join. Can never have too much knowledge or too many resources. I am located in Upstate SC. I have been smoking meat for 25+ years. I have quite an array of smokers. My smokers include a 22 and 18 WSM, Primo XL, Traeger Texan, Backwoods Piglet Plus, Backwoods Competitor, a UDS, and a few miscellaneous cookers. I have done a few competitions and would like to do more. I have attended Myron Mixon's school, Carolina Pitmaster's Class, and Carolina Outdoor Cooking Class. I enjoy cooking, especially outside. I look forward to sharing ideas.

South Carolina actually has four distinct regions for sauces;Vinegar and Pepper, Mustard, Light Tomato and Heavy Tomato. The mustard is primarily found south and east of Columbia, Vinegar and pepper around Columbia, The tomato based sauces are found in the Upstate. I like all of them. Vinegar and Pepper is my favorite. Of course good meat needs little in the way of sauce. It is all about the meat and the smoke.

Once I hit a little bbq shack in Alabama. They gave me ranch dressing for sauce! Jk it wasn't ranch, it was mayo sauce. Now I make my own (can't buy it here). I'm hooked on the stuff.

Welcome over here. Thanks for the sauce geography lessons. I did not know know it was that varied. Sounds like you have plenty of good equipment.
