Helped out my buddy Rita for a party for 25 at a place she runs called
the Cooper House, one of those historic register places....it's an old house
and an old general store that had the 2nd post office in this counties history...sits right on the intracoastal waterway.

Rain finally came but I had a nice sheltered area....thanks to everyone
for the prime rib help this week, they came out great.

ok, I used my big gasser that I've modified with a second tray right above the burners....then I took 2 of the Weber charcoal trays that
you use in a kettle, loaded them with charcoal and covered em with chunks...they went on the lower grate. Used gas to maintain temps.


I was cooking bird and cow at the same time, so I went with 325.
I would have like to do the birds at 350, and prime ribs at 275, so
a compromise. I pulled the beef at 125, foiled and rested...didn't bother
checking the temps out of the foil.

I seasoned it with Montreal seasoning and Durkee steak dust, then
sprayed with Remington marinade every time I opened it, which wasn't
much. Really simple.

Some of the women complained it was too rare, so I kinda grilled
some pieces for them.

Really simple, just like you guys said.
 
Great stuff Jim. Just wondering why you guy's didn't have a carving station for the prime rib for portion control. Put a half pan of that around here and it would be gone after the fifth person. :LOL:
 
I was the carving station, but when I took pics I had already sliced
up what was left over and put it in the pan. There was still some left
over that was my breakfast Sunday morning.

People are so bizarre....some saying it was too rare, one guy asked
if I had AI sauce. ...sheesh
