Here we go.....

Well, I am cooking the next two weekends (not this, I am playing in my band Fri and Sat at Bike Week in Sandusky,) Just bought the ribs and Salmon for next week and refrigerated the ribs and froze the salmon. Scrubbed out all my buckets, chafers, etc. Loaded the tables, propane, matts, wood, cooler into the lograck.got all the serving stuff prepped. got out the EZ-UPS (bought a new one too!). All I have to do now is pick up the beiskets and whole chicken legs Wednesday and load it up to go Friday........First two gigs ended up being "meat only." Another season on the brink.......

What kind of salmon did you get, Woody? Just curious what folks are eating in the midwest.

Griff, it is just that "farm raised" Atlantic type stuff. I swear, people like that more than anything I make! I take a foil cake-pan (really more like a cookie sheet) and lay out two filets on it (folding the small ends of the filet under to "thicken" the thin side of it,) rub both sides with Texas BBQ Rub, and smoke for about 90 minutes. FOLKS RAVE ABOUT IT!!! Go figure!!
