picked up some jimmy dean BOLD country sausage HOT this weekend and decided to cook up a fatty. didn't rub it or anything, just smoked it.
when I was slicing it you could see the black pepper and other flavors in the sausage. initial taste was, this isin't that hot until you consume about 3-4 pieces and let it rest a bit, wow, it hits ya.
