*ps..Now I bastarized this stuff all up cuz I put sausage and chicken thighs shrimp and okry in mine blah blah blah. I aint much on crabs but I do like oysters but not in Gumbo so I skipped both them parts. I also let it set overnight in the ice box and degreased all the margarine off the top of it. For the seafood stock try Minor's brand Shrimp base..whew that some good stuff. This recipe is made specifically to use Gumbo File from the Farmer Brothers Coffee Company which has some seasoning in it other than pure ground sassafrass leaves. It turned out to be a grand prize winner. Hope this helps.
