Cajun seafood gumbo

Seafood Gumbo

1 c Flour
1/2 c Oil
2 ea lg. Onions, chopped
3/4 c Green onions, chopped
1/2 c Parsley, chopped
2 cn 16oz. Tomato sauce
1 T Crab boil, liquid
2 T Creole seasoning
2 qt Water
5 T Kitchen Bouquet (For color)
5 lb Shrimp
1 lb Picked crab meat
1 ea lg. Bell pepper, chopped

Make a roux using flour and oil. Mix in a heavy pot. Mix slowly and stir constantly. It takes about 45 minutes to 1 hour to cook roux to color of Hershey chocolate bar. The flour taste will be gone if cooked in this manner. Add onions and bell pepper. Simmer on low heat until onions are clear. Add tomato sauce and crab boil. Add water and Kitchen Bouquet as desired for color. Cook slowly for 35 minutes. Add green onions and parsley. Add creole seasoning and crab meat. Cook some more. Let simmer about 45 minutes. Add shrimp about 20 minutes before ready to serve. (You may also add crawfish, oysters, fish or any other seafood you desire.) Makes approximately 2 gallons.

Note: Chicken and turkey do well with this too, smoked or not.
