Hey everybody, I have a question. I have a 9.5 lb. pork butt that i'm about to smoke. I've learned that you normally smoke a pork butt an hour per pound. My question is this. If I cut the pork butt in half, would the cooking time be cut in half? Your thoughts are always appreciated.....:rolleyes:
 
First off, going by pound is a rough estimate of time. Always go by the internal temperature. Cutting it in half should cut down on the time, but you will have to watch it closer now, you don't want it to dry out into a meteorite.
 
Cutting will shorten the cooking time. If you are short on time I would cook at a higher temp say 300-325*, a pork butt can handle the higher temps, and/or wrap the butt in foil or butcher paper after it gets past 160* internal.
