Embutido (Filipino Meat Loaf)

Many recipes are influenced by other cultures. This classic meatloaf has been recreated with chicken and pork combined with raisins and vegetables to give it a sweeter flavor more suited to Filipino tastes.
INGREDIENTS
Meat Loaf

* 6 ounces ground pork
* 2 ounces ground chicken
* 1/4 cup chopped celery
* 1/4 cup shredded carrot
* 1/4 cup chopped red pepper
* 1 cloves garlic, minced
* 1/2 cup California raisins
* 1 tablespoon Chinese sausage
* 1/4 cup frozen peas
* 1/4 cup bread crumbs
* 1 egg, beaten
* 1 tablespoon oyster sauce
* Vegetable oil; as needed for grilling or sauteing

Embutido Sauce

* 1 can (6 ounces) tomato paste
* 1/2 cup chicken broth
* 1 bay leaf
* Pinch of salt
* 1 teaspoon pepper
* Chopped spring onion; as needed for garnish

PROCEDURE

Preheat oven to 350°F. In a bowl, mix meatloaf ingredients, except oil, all together. Divide into 2 equal portions. Form each into a log and wrap in sheet of aluminum foil (about 8 inches x 10 inches). Secure by twisting each end tightly to form a sausage shape. Place in a deep baking pan.Bake at 350°F for 1 hour. Cool for 20 minutes. Unwrap and brown on grill, brushing lightly with oil, or saute lightly in hot oil.

For sauce, combine chicken broth and bay leaf in small saucepan. Bring to boil. Add tomato paste and return to boiling. Remove from heat. Discard bay leaf; salt and pepper, to taste.

To serve, slice rolls in thin slices and spoon sauce over or serve sauce on the side. Sprinkle finely chopped spring onion over all.
