Does anyone have an idea on temperature for country style ribs? The last batch I made on the WSM dried out. I probably brought the temp up too high. In the past I've cooked them indirectly on the Weber kettle with great results. I just can't remember how long or what temperature I brought them to.

Thanks,
Oak

I go direct about 18 inches from the coals and put them in a 1/2 pan at 140F.
Time? Not sure, Bro Jack and I did about 10 pounds the past weekend and time is no factor at camp. I think it was 15 min per side over med to high heat. 350-375F We just made sure we pulled them off at 140F
