Smoked Turkey Pot Pie

Smoked Turkey Wings and thigh meat from one 14lb turkey
Frozen veggies of your choice
Ready made pie crust
Cornstarch
Black Pepper, Kosher salt, poultry seasoning and onion powder all to taste

Simmer turkey wings in about 1 quart of water until they fall apart and remove skin and bone
Add chunks of thigh meat to the stock and let simmer another 20 minutes
Add 2 bags of frozen veggies and return to a boil
Mix 2 TBS of cornstarch with 1 cup of water to make a slurry
Pour slurry mixture into the pot with meat and veggies and stir until it starts to thicken and remove from heat (don't worry about fully cooking the veggies, they'll finish cooking while the pie is baking)

Unroll pie crust into the bottom of a pie pan and pour mixture in but do not over fill.

Unroll top pie crust and crimp the bottom and the top shells together with a fork and remove excess.

Pierce middle of top pie shell to vent and bake according to the instructions on the box for the pie shells.
