Smoke Chicken Question

I purchase some smoke chicken leg quarters from
Jacobs World Famous Andouille in LaPlace, LA. website

The leg quarters are smoked very heavy. My question is what can I do with the leg quarters besides Gumbo, Jambalaya or Stew? Please provide recipes are sugestions.

Yep, bean or split pea soup! Or ABT's! If they're too strong flavored for your taste, soak them in cold water for an hour or so. They could be cured or very salty if htey are like the turkey legs and ham hocks we get in the stores around here.

Oh man do I love smoked chicken salad. I agree with Larry :shock: . Put that with some beans or even some black eye peas, its called Hopping John . Just substitue the ham with the smoked chicken. YUMMY.
 
Take the crawfish stuffed green pepper recipe (with the minced pepper/onion/celery and heavy Cajun seasonings) and substitute craw fish with chicken. Just a thought.
