This recipe is from the Mustard Tree Inn, Tallahassee, FL. As usual, I've altered it; they grill the chicken and then use a cookie pan in the oven. I pan fried it then used the same pan in the oven, that way I could fry with garlic and not have to clean the grill.
Start out by frying some bacon, set aside.
While it’s frying chop up some scallions, green pepper, onion, and tomato.
Set oven temp at 375 degrees, brown chicken in some of the bacon fat and margarine add garlic the last couple of minutes, then some of your favorite cheese; I used horseradish cheddar.

Tomatoes (No I’m not Dan Quale, that’s the way spell checker shows it)
Bacon
The rest of the cheese, and into the oven for 10-15 minutes.
I steamed some red potatoes (Again, blame spell checker) and added butter, sour cream, and chives.
