Ole Man Jim's Meat Loaf

barbecued beef

5 lb Ground chuck roast
2.5 lb gound pork
2 large onions; minced
1 bell peppers (red, green, yellow); minced
16 oz Italian Seasoned breadcrumbs
2 oz cajun BBQ rub
2 teaspoon thyme
2 teaspoon sage
6 large eggs; beaten
1/4 cup danny's glaze
1/4 cup sesame oil
1/3 cup Danny's Glaze Recipe
1 cup brown sugar
1/4 cup apple cider vinegar
1/4 cup prepared yellow mustard
2 cloves garlic; minced

DANNY'S GLAZE
Place brown sugar, vinegar and yellow mustard in a
small pot and bring to
a simmer (Do not boil.)

MEATLOAF
Thoroughly hand mix first eleven (11) ingredients and
form into 2 equal
oaves. Place each loaf into a foil loaf pan and place
both into a 2750F
pit for 2-1/2 hours. Remove from pit, brush tops with
Danny's glaze and
return to pit for 15 more minutes.

Not 2750 degrees F. My smoker & grill just can't get that high. :D
It is strangely ironic the instructions in question coincide very well with your BBQ-4-U handle and that you were the one to point out the typo, Burnt Food Dude (BFD). :grin:

Anyway, it looks like a killer recipe. I don't think I'd use a pound of breadcrumb myself, maybe half or a third of that. I try to use just enough to get the ML to bind, but I really like the Cajun, ground chuck and ground pork idea.

Shawn, I'm with you on the bread crumbs buddy! I used a half pound less of meat than this recipe calls for and I think I used at the most 3/4-1 cup of bread crumbs.
 
Not many changes, but here you go.

Doing my first meatloaf cook tonight and using Ole Man Jim's Meatloaf recipe found in the Beef Recipe Section. Couple modifications I made.

Only used 6lbs of meat (4lb ground chuck, 2lb ground pork)
1 lg Vidalia onion
1 lg bell pepper
12oz itailian bread crumbs instead of 16
2T of Emerils Essence, instead of cajun BBQ rub
1ts Thyme
1ts Sage
4 lg eggs
sprinkled top of loaves with Head Country Rub
All else the same, these changes were made mainly due to reduction of meat..
