Hey Ronbeaux. I need a kick ass recipe for a Cajun dish.
I'm cooking something for my wife's birthday on Friday and she wants Cajun. Now, I cook a killer gumbo, shrimp etouffee, jambalaya, and/or shrimp Creole. I want to try something new. Your cooking looks great, so I want to pick your brain for a good swamp dinner.
Any good ideas????
Anybody else is welcome to throw in a suggestion too.

I'll give you a cajun dish...add anything that walks,crawls,swimms or flys...make a gravy, add the trinity...and enough spices to blow your ears off....serve over rice
