I would go with a basic Hollandaise sauce with pinch of white pepper and perhaps a touch of fancy Italian grated cheese (not the kind in the green box) or perhaps some Feta.

I'd second the Hollandaise. Also, maybe a simple white wine sauce or a lemon bere blanc.
Also, my Shrimp and Grits recipe uses asparagus in it.
