You got me thinking (a rare occurance). So I went back and looked at the page you were referring to (http://amazingribs.com/buyers-guide/checklist.html). It was something I wrote about a year ago, and since then I have had a chance to work with a lot more cookers, among them three different electric smokers, and I have changed my mind about them, especially about the way they cook ribs. I no longer recommend them for ribs. I still like them for thick cuts, such as butts, briskets, and even for fish, but not ribs. So I rewrote the page and hereby retract my snide remarks about traditionalists. All that said, I still am a fan of gas smokers http://amazingribs.com/buyers-guide/gas-smokers.html and pellet smokers http://amazingribs.com/buyers-guide/pellet-smokers.html because they are so easy and the flavor is so good. In fact, I think you can make competition quality ribs on a plane old gas grill using a method I recommend on http://amazingribs.com/technique/gas-grill-ribs.html.
