What to eat after a long weekend of bbq??

Quesadillas!

I started the weekend by judging a comp and completely hurt myself judging all four categories. No dinner needed Saturday night! Then I took Mrs RB over to Scott Louisiana to eat at The Shed for lunch today.

Well even though we were completey full when we left, come 1800 we were thinking about dinner. BUT NO BBQ!

Sooo. It was fajita quesadillas.

Fajita meat with cheese and chopped fresh jalapenos, smashed flat and cooked on a stone until crunchy and the cheese melted. Served with hominy and spanish rice. Washed down with cold beer.
 
Looks like a fine establishment and the food you made looks mighty yummy. Good job. Give us a wild guess percentage of the judging entrees which was not fit to eat. Thanks. It runs about 50% in these parts.

Fortunately I was at the final table for an IBCA event so all the 'not so good ones' were weeded out. There were two that got chunked(DQ'd) in the first round table for being raw(chicken), ribs that you would need a power tool to slice through and get this, A BRISKET turned in that was a perfect 138 medium rare!!! That boy must have thought he had a whopper ribeye!

This was only my second time to judge. I prefer the other side but it's been so long since me and the MRS have been able to go I wanted to see what was happening. Doc declared her 100% and we are ready to hit the trail. Next weekend is Ponchatoula. We are all signed up and ready.
 
Very fortunant to land on the finals table. You know I got a dear old bbq pal who took a year off from cooking to do strictly table judging. He claimed to have learnt more in that time frame than he would have learned by actually cooking in about 20 contests. Sounds plausible to me cuz he was in a slump going in and when he come out his cooking made some giant strides toward the much mo betta side. Smart thinning. Continueth to have fun.
