What to do with leftover grilled Italian Chicken?

I had some leftover grilled Italian Chicken, so I sauteed bell pepper, onion, garlic and mushrooms and added in tomatoes and let simmer for an hour. The filled hoagie rolls with the mixture and topped with cheese. DARN good!!!
