I haven't done a tri tip in a while so I fixed that today.

Tip seasoned with some SuzieQs and some Carl's Ol' Western Barbecue Spice. On the grill with a chunk of red oak for smoke.

Time to pull the tri tip and crank up the heat.

Reverse sear and removed at 125* internal.

Also made some potato pancakes

green beans with mushrooms

and some cheesy garlic bread.

Sliced tri tip with a touch of Kinders BBQ sauce on top of the garlic bread.

then topped with some homemade Santa Maria style salsa

Looks like a reverse sear? Does that really work? P.S. Was at Albertson’s yesterday, Tri Tip on sale for $299 a lb. Picked a few for the freezer.

Santa Maria Style Salsa

3 medium tomatoes, chopped
1/2 cup celery, finely chopped
1/2 cup green onions, finely chopped
1/2 cup mild green chiles, finely chopped
2 tablespoons cilantro, fresh
1 tablespoon vinegar
1 dash Worcestershire sauce
1 pinch garlic salt
1 pinch dried oregano, crushed
a few drops hot pepper sauce

Combine all ingredients in a bowl, cover and let stand at least 1 hour to blend flavors. Makes 3 1/2 cups.

John that looks terrific! My plan was to do Tri Tip for Saturday Night's dinner. I love the way you made the sammy out of the garlic bread. Will give it a shot myself!

Just made these on some mini sub buns, WOW great sandwich. The Santa Maria Salsa is super. Thanks for the post John.
 
That looks like a fantastic meal. That tri-tip had the perfect color, it was enough to make me run out to get some tri-tips for dinner tonight. I really like the idea of putting it on garlic bread, delicious combination.
