Looks like you ate very well this week!!

Does that jerk seasoning have much kick to it?

Sad but no, has really good flavor though, I think it would make a great marinade with some scotch bonnets, It has some heat but not jerk heat.

Nice. How did you cook those potatoes. Recipie please! and did you cook on you WSM hot wihtout the water pan in those last picts. I usto to do that. Now just about every cook that requires indirect gets cooked that way ( on my uds now ) you get a perfect piece of meat. You don't have to sear and move over indirect.

The potatoes are sliced thin onion on the bottom of foil so they get all carmalized goodness, potatoes sliced on top of that....LOTS! of butter salt and pepper cooked indirect bout 450 for a hour.

Yup did the chicken hot on the WSM no water pan over high heat ran about 375 to 400, with out the water pan a wsm is just like a uds. I agree I don't think i'll ever make batches of chicken any other way they come out perfect. you get amazing flavor from the juice falling down on the coals and smoking and I threw 2 chunks of cherry wood on the fire and even hot and fast the chicken had a smoke ring.
