Stuffed Peppers

Cooked a little vegetarian this past weekend as a friend of mine, who is vegetarian, and was SUPPOSED to visit. Well, she never did but the stuffed peppers made a nice accompaniment to Crab Meat stuffed ABTs and skirt steak fajita (to keep the universe in balance).

Doug, and believe it or not she is from Texas. I never knew there was such a thing as a vegetarian from Texas. I tease her that she is not allowed back in the state because she won't eat anything with a face. Next time I get her over here I am going to make a cheese ball shaped like a head. Cha cha cha cheeseball.
