Soup and Salad Night

I got sucked in on those tortilla molds and finally picked up a set and tried them out tonight. They work as advertised.


Cooked up a lb. of beef, added a can of black beans, some taco seasoning, and some water


Then let it simmer till all of the liquid evaporated


taco salad


My Wife made some Albondigas soup even though we are in the middle of a heat wave. It was great but wow was I sweating trying to eat it.

Looks good V! If you want to get out of the heat, we are expecting a low of 33 this weekend in my area. The kids want to camp out in the backyard too.

Looks good..wheres the soup recipe? I got a palette who makes the funky shaped taurpolians using an upside down muffin pan. Guess she missed the infomercial or something.

I only paid $11.00 for the molds and the tortillas pop right in. The muffin pan looks like it might take a little finessing to get the tortillas just right.

My Wife's Albondigas recipe.
Cook about a cup of rice.

Add half cup rice to a lb ground meat along with some garlic powder, onion powder, salt a pepper, She didn't give me amounts on the spices.
Then make about ping pong size meatballs. Pack them pretty tight as the rice will still expand when put in the soup.

Saute a couple of carrots, 2 stalks celery, and half an onion.
Add a can of the small tomato sauce, then add four cups chicken broth
Add the meatballs and remaining rice to soup and cook till meatballs are done.

Dang thanks. This gives me a slight rememberance of a recipe which come with the pressure cooker which was for Porcupine Meatballs. I just love them things and this looks much superior. I think the recipe the Warden followed called for raw rice and Tomater Soup over the top..gag heave sputter....this one got to be mo betta. Even though the other one tasted good too but this was back in the 70's so tastebuds have bound to have changed since then. Now has any ever heard of Cedric's Casserole? One of my all time favorites.
