My mother-in-law is staying the night with us tonight and that gives me a chance to get out by the grill. We usually go out on Christmas Eve and then run all over creation on Christmas Day. This is the 1st Christmas I actually get to cook something...Awesome!
Decided to do the "Whole Turkey - Salted" recipe from TVWBB. We've done it a few times before and it always turns out great.
Here we go...
Ready for the smoke. I used a few cherry chunks.
On.
After one hour, turned.
While the cook was going on, my little "Angel", who hasn't been so angelic lately with all the presents under the tree sending her into meltdown stage because she can't open them, decided that "Santa likes little girls who help clean"...
After two hours, 10 degrees to go, turned the dark meat to the heat.
Done.
Mashed potato casserole (from Cook's Country) in the oven and some green beans as a side (not pictured - we all know what a green bean looks like ).
Plated.
Pretty good...not the best turkey I've ever had but very good. I think this recipe does better on the WSM for some reason. What was surprising was how good the gravy was from the drippings. Awesome!...slightly smoky, slightly salty, very different from traditional turkey gravy. All we added was fresh ground pepper (and a rue, of course). It was different but extremely good.
