Wolfe Rub Original on half a rack of untrimmed spares, salt, pepper and garlic on the other half. Also did a sweet potato hasselback version.....basted with a mixture of butter, honey and Wolfe Rub Original, VERY good stuff! Kinda like candied sweet potatoes!

While the ribs were cooking, I was enjoying a few beverages and a Rocky Patel on a nice 80º October day!!

After about 45 minutes, I began to baste and repeated every 10 minutes or when I needed another beer. Whichever came first.

While the food looked good, the cook was shot a LOOOOOOONG time ago! :LOL: I like that set up with extended grate. Is it screwed down or does it just rest in place?

The top grate is screwed in place and it rests in place.

Ribs and sweet potato look great. I notice that you scored the sweet potatoes. Is there a specific reason for that other than making them look like giant caterpillar cocoons? :LOL:

It's a version of a Swedish potato called the 'Hasselback Potato'. It flavors each piece of the potato versus just the outside.
