Drizzled the pork chops with Zesty Italian Dressing and Wolfe Rub Citrus, let marinade for a couple hours. While they were marinating, I marinated some bok choy (thanks Scotty for the tips) and eggplant in Zesty Italian Dressing and seasoned with salt and pepper. Painted oil on sweet potato rounds and sprinkled with Wolfe Rub Original after the initial sear.

Overall pretty good dinner!

Loved the BoK Choy, it was a hit with the family and very nice to have something NEW on the grill! Very refreshing!!
