Pit Beef Sandwiches

Got a 3.5lb CAB top round steak on sale for $4. Generously seasoned with Kosher salt and coarse ground pepper.

I light 'my fire' first. Thanks 'Rick' for another superb and real Cuban Cohiba!


Put the meat on indirect, fire around 235ļ.



I'm enjoying the wait.....


This little sucker scared the crap out of me. This was literally about a foot away and I didn't even see him fly up. Sat there for a long time just watching me. He had a tag on his foot, anyone know what that's about? He sang later on after he flew up into the tree, I love the sound of Doves.


Meats at 105ļ and ready to sear.


Added some asparagus with EVOO and salt and pepper and spritzed with a little lime juice.


Dinner is ready!


Multi-grain bun with lots of horseradish.


Lots of onion on the sandwich! Vidalia would have been better, but all we had was red.

I think a tag on the "right leg" means he's spoken for. A tag on the left leg means he's gay. Watch out Larry, he seems to have an eye on you.
