A couple of nicely marbled, choice, NY Strips with olive oil, kosher salt, garlic salt, and ground black pepper coming up to room temp.

That reminds me of what Bill Monroe said after eating his first bagel - "Toughest doughnut I ever ate, didn't have much sweet either".
