I had the day off today (forced - a furlough day ) so I thought I'd throw something on the grill for my girls that had work & school. Inspired by a chef over at TVWBB I decided to do his nachos.
First things first. It was so nice today that we were required by law to eat out on the patio tonight...so I got the drinks ready so we wouldn't have to run in and out of the house and could stay out in this awesome Spring weather as long as possible.
1 lb. lean ground beef and 1 lb. 80/20 ground pork, grated cheddar and store bought taco seasoning...porcelain coated CI skillet that matches the Performer...
Meat on and browning, taco seasoning added at this time.
Meat browned, water added and then simmered, indirect for 20 minutes with a small oak chip foil packet.
Rotated half way through.
Off.
Table with some homemade guac and pico de gallo and a fruit salad.
My high-carb chip...one of a couple dozen.
Leigh-Ann's low-carb bibb lettuce wrap...one of a half dozen or so.
