Marinated some thighs, legs and a boneless skinless chicken breast (the breast was for my daughter) in some caribbean jerk marinade for dinner. The chicken marinated for about 4 hours before they hit the grill. We also had some beats that I wrapped in foil with a some butter, salt and pep. I also saw some leaks at the store that I decided to try. I cut off the ends then tossed em in a little boiling water then blanched em in some ice water. Once out of the ice bath I brushed em with some evoo and seasoned with salt, pepper and a little garlic powder. I have to say they were pretty darn good. Everything was grilled over kford comp and mesquite. Man I love this time of year.
